Ingredients
  1. 1 tbsp. margarine (soft, light, non-hydrogenated)
  2. 1 cup onion, chopped
  3. 2 cups spinach, chopped
  4. 4 large eggs, whole
  5. 1 cup cottage cheese (1% or non-fat)
  6. 4 oz. (112g) shredded cheddar cheese (low fat if possible)
  7. 1 tsp. olive oil
Instructions
  1. Preheat oven to 350°F. Heat margarine in a small non-stick skillet. Saute onion until tender. Combine eggs and spinach in a large bowl. Stir in cottage cheese, cheddar cheese and onion. Pour into a baking dish greased with olive oil. Bake uncovered for 45 - 60 minutes or until set.
